1yellow onion, diced,
1red bell pepper, diced,
1lb.lean (97/3) ground beef,
1(15 oz.) canlow sodium pinto beans,
1(15 oz) canlow sodium corn,
1(5 oz. can)hominy,
1(15 oz. can)H-E-B Fire Roasted Tomatoes,
2c.Central Market Organics Low Sodium Chicken Broth,
1pkg.H-E-B Low Sodium Taco Seasoning,
1pkg.Hidden Valley Ranch Dry Salad Dressing Mix,
*Toppings: Chopped Cilantro & Lime Wedges,
1Place olive oil in a large pot and heat on medium high.
2Saute onions and peppers until onions are translucent. Spoon into a small bowl and set aside.
3In the same pot cook ground beef until completely browned.
4Return cooked peppers and onions to pot and add all remaining ingredients except toppings.
5Bring to a simmer and serve immediately.
6Top with chopped cilantro and a squeeze of lime.
