1lb.boneless skinless chicken breast,
1/2 tsp.gound cumin,
1can (4 oz.)diced green chilies,
1ctn. (32 oz.)low sodium chicken broth,
2cans (15 oz. each)white beans rinsed and drained,
1/2c.monterey jack cheese,
1Place a large pan on Medium-High heat. Add oil and then chicken. Cook several minutes.
2Add garlic, onions, cumin, and green chilies. Cook 4 to 5 minutes or until onions begin to brown.
3Add chicken broth and beans. Bring to a simmer for 3 minutes then reduce heat to Low. Cook chili an additional 30 minutes.
4Serve with a sprinkle of cheese.
