3slicesbacon, finely diced,
2lbs.ground chicken or turkey meat ,
1/2jar H-E-B That Green Sauce,
1c.fresh or frozen spinach, finely chopped,
1/2c.carrots, grated or matchstick,
1 each tsp.garlic, fresh, chopped & cumin,
3/4c.chicken broth & heavy cream,
1canwhite beans (Great Northern or Cannellini), rinsed & drained,
1Heat a large skillet to a medium - high. Add bacon and fry until fully cooked and slightly crisp.
2Add onion and ground chicken, sautéing until nicely browned and cooked through, approximately 8 - 10 minutes. Add remaining ingredients and simmer 15 - 20 minutes or pour into a slow cooker, set on low and cook 45 minutes. Great made a day ahead!
3Serve with shredded cheese and tortilla chips if desired.
