Gnocchi with Power Greens and White Beans

Ingredients

16 package (16 oz.)shelf stable gnocchi, potato,

1mediumonion, thinly sliced,

3clovesgarlic, chopped,

15 oz. cont.Central Market Organics, Power Greens or spinach,

115 oz. canstewed tomatoes,

115 oz. canwhite beans, rinsed,

1/2 cup2% shredded mozzarella,

2Tbsp.olive oil,

1/4 cupparmesan cheese,

1/2 tsp.black pepper,

Directions

1Heat olive oil in a large non-stick skillet over medium high heat. Add in gnocchi and cook until browned. Approximately 5 to 6 minutes. Remove from heat and transfer to a bowl.

2Return the skillet to the heat. Add the other tbsp. of olive oil and onions. Cook for 3 to 4 minutes until onions become translucent. Add in the garlic and the 1/2 cup water. Cook an additional 3 minutes. Add in Power Greens and cook until wilted. Then stir in tomatoes, beans and gnocchi. Bring to a simmer for 3 to 4 minutes. Remove from the heat and serve.

3Sprinkle with parmesan and mozzarella cheese.
