2c.low fat milk,
3oz.low fat cream cheese,
3Tbsp.all purpose flour,
3cloves garlic, crushed,
2c.baby spinach, chopped,
1pkg. (12 oz.) 100% whole wheat fettuccine, cooked,
1Place milk, Neufchâtel cheese, flour, and salt in a blender and blend until completely smooth.
2Melt butter in a non-stick saucepan over Medium-High heat. Add garlic and cook approximately 30 seconds.
3Add in milk mixture and cook 3 to 4 minutes, stirring constantly until sauce comes to a low simmer. Add chopped spinach and cook an additional 2 minutes. Sauce should be thickened.
4Remove from heat and stir in Parmesan cheese. Cover and let it stand 10 minutes before serving over cooked fettuccine.
