1lb.Ahi tuna steaks, fresh or frozen (or substitute chicken),
1English cucumber, cut into quarters, seeds removed, and cut diagonally,
1/4c.cup capers, roughly chopped,
1bunch parsley, chopped,
1red onion, small, diced,
1can (12-15 oz.) artichokes in water, rinsed, drained, and quartered,
1Preheat oven or grill to High. Thaw tuna if frozen.
2Place tuna on grill and cook to desired doneness. Remove and cool.
3Meanwhile, combine remaining ingredients.
4Chop tuna into small pieces and incorporate into salad.
5Cover and chill until ready to serve.
