1package H-E-B pie dough,
6Granny Smith apples,
1/2 tsp.lemon zest,
8salted caramel candies, chopped,
1Preheat oven to 350°F. Spray a muffin tin with nonstick cooking spray.
2Roll out the pie dough, cut 12 pieces with a large round cookie cutter, and place pieces in the muffin tins.
3In a large sauté pan, combine butter, apples, sugar, lemon zest, cornstarch, and nutmeg. Cook until apples soften and liquid thickens.
4Spoon the filling into individual muffin tins and top with chopped caramels.
5Bake for 30 minutes. Allow mini-pies to cool completely before serving.
