Herb Roasted Pork Loin

2lb.pork loin, cleaned & trimmed,

1/2 tsp.salt,

1Tbsp.olive oil,

1 tsp.dijon mustard,

2cloves garlic, minced,

1 tsp.dried thyme,

1 tsp.dried rosemary,

1 tsp.dried basil,

1 1/2c.Central Market Quick Cook Grains Barley, Lentils & Split Peas, cooked according to directions,


1Preheat oven to 475°F.

2Place pork loin on a foil lined sheet pan. Combine all other ingredients in a small bowl. Spread mixture over pork.

3Roast 10 minutes, reduce temperature to 400°F and roast an additional 30 minutes or until internal temperature reaches 155°F. Rest 15 minutes before slicing.

4Serve with the Central Market Quick Cook Grains Barley, Lentils & Split Peas.
