Cilantro Chicken With Black Beans & Mango Salsa

2mangos, peeled & diced,

1lime, juiced,

1/2cucumber, peeled, seeded, and diced,


1/2red onion, diced,

1jalapeno, diced,

1Tbsp.chopped garlic,

3Tbsp.chopped cilantro,

1/2 tsp.each salt & pepper,

2Tbsp.canola oil,

4(6 oz.) boneless skinless chicken breasts,

1can (15 oz.) H-E-B Black Beans,


1Make salsa in a medium bowl: combine mango, lime juice, cucumber, honey, red onion and jalapeño. Set aside.

2Preheat grill to Medium-High. In a medium bowl combine garlic, cilantro, salt, pepper, and canola oil. Add chicken and turn to coat.

3Grill chicken 7 minutes per side flipping once.

4Heat beans and spoon onto a plate. Top with grilled chicken and mango salsa.
