Seared Chicken With Black Beans, Cilantro & Roasted Peppers

1Tbsp.chopped garlic,

2Tbsp.canola oil,

1/2 tsp.each salt & pepper,

4(5 oz.) boneless skinless chicken breasts,

1can(15 oz) black beans, rinsed and drained,

1/2jar (12 oz.) H-E-B Harvest Moon Fire Roasted Red Peppers, rough chopped,

1bunch cilantro, chopped,

1/2c.H-E-B Low Fat Sour Cream,


1Preheat a large sauté pan to Medium-High.

2In a bowl combine garlic, oil, salt and pepper. Add chicken and turn to coat.

3Place chicken in hot pan, sautéing 6 to 7 minutes per side. Cooking time will differ depending on thickness of meat.

4Add in black beans and chopped peppers, and cook 3 minutes.

5Finish with chopped cilantro and sour cream.
