Seared Salmon with Broccoli & Lemon

2Tbsp.canola oil, divided,

4(6 oz.) salmon filets,

*salt and pepper to taste,

3red potatoes, sliced 1/4 thick,

1/2bunch broccoli, chopped small,

1 1/2c.Central Market Low Sodium Chicken Broth,

2lemons, juiced,


1Preheat oven to 350°F.

2Preheat a large sauté pan to Medium-High. Add 1 Tbsp. canola oil.

3Season salmon with salt and pepper and place in preheated pan. Sear one side of salmon and set aside about 5 minutes.

4In the same hot pan add remaining oil and potatoes, and sauté 5 minutes on each side. Season with salt and pepper.

5Add broccoli and sauté another 3 minutes.

6Place salmon (seared side facing up) on cooked broccoli/potato mixture. Add broth and lemon juice, and bake 15 minutes.
