Citrusy Seared Chicken Breast With Artichoke Hearts

2Tbsp.canola oil,

*salt and pepper to taste,

4(6 oz.) boneless skinless chicken breasts,

1c.cherry tomatoes, halved,

1can (6 oz.) H-E-B Quartered Artichoke Hearts In Water, drained,

1/2c.Central Market Low-Sodium Chicken Broth,

2Tbsp.chopped parsley,

1c.H-E-B Shredded Parmesan Cheese,

1lemon, zest only,


1Preheat large saut&eactue; pan to Medium-High. Add canola oil. Salt and pepper chicken, place in hot pan, and saut&eactue; 5 minutes on each side until deep brown.

2Add tomatoes and drained artichoke hearts. Cook 2 minutes, add broth and simmer an additional 3 minutes. Add parsley, remove from heat, and top with Parmesan and lemon zest.
