1/2lb.boneless, skinless chicken breasts,
1large H-E-B 100% Whole Wheat Ultra Thin & Cripsy Pizza Crust,
4Tbsp.bbq sauce, divided,
1pkg. (8 oz.) H-E-B Shredded Part Skim Mozzarella Cheese,
1/4c.diced red onion,
1cucumber, peeled and thinly sliced,
1Place chicken in a medium saucepan, cover with water and bring to a boil. Cook 10 minutes or until chicken reaches internal temperature of 165°F. Cool, shred, and set aside.
2Preheat oven to 375°F. Place pizza crust on baking pan.
3Add 3 Tablespoons BBQ sauce to center of crust and spread to 1/2" of edge. Sprinkle 1/4 cup cheese over sauce. Add chicken, onion and cucumber. Drizzle remaining BBQ sauce over pizza and top with remaining cheese.
4Bake 10 minutes, or until desired crispness. Cut into 8 slices.
