• non-stick cooking spray,

1lb.boneless, skinless chicken breasts,

1c.portabello mushrooms, quartered,

1/2c.H-E-B Halved Artichoke Hearts, drained and patted dry,

1Tbsp.H-E-B Unsalted Butter,

1/3c.H-E-B Sundried Tomato Halves,

1/2c.Central Market Organics Low Sodium Chicken Broth,

1lemon, juiced,


1Bring large nonstick skillet to Medium heat. Spray with cooking spray and cook chicken 6-8 minutes on each side.

2While chicken cooks, clean mushroom tops with a damp paper towel and cut into quarters.

3When chicken is cooked through, transfer to a clean plate.

4Reduce skillet heat to Low. Add butter and lightly sauté mushrooms, tomatoes, and artichokes until heated through, about 3 minutes. Add chicken broth and lemon juice.

5Return chicken breast to skillet and allow sauce to reduce 2 minutes before serving.
