1/2red onion, cut into very thin 1/2 moons,
1/2cucumber, cut into 1/2 moons,
2Tbsp.fresh lemon juice,
2Tbsp.Hill Country Fare Extra Virgin Olive Oil,
1/4 tsp.H-E-B Kosher Salt,
1/8 tsp.black pepper,
1/4c.Italian parsley, chopped,
1/2c.reduced fat feta, crumbled,
1Mix tomatoes, onions, cucumber, lemon juice, olive oil, salt, and pepper in a mixing bowl. Add Italian parsley and mix well.
2Serve salad on a nice platter with crumbled cheese over the salad.
3Refrigerate or serve immediately.
