Southern Beans and Rice

1Tbsp.H-E-B Olive Oil,

1medium yellow onion, diced,

1red bell pepper, diced,

1stalk celery, diced,

2garlic cloves, minced,

1c.H-E-B Brown & Wild Rice,

1/2tsp.dried thyme,

1can (15 oz.) H-E-B Kidney Beans, drained and rinsed,

1/2c.H-E-B Cocktail Smoked Sausage, sliced,

1 tsp.salt,


1Heat oil in a large nonstick skillet over Medium heat. Add onion, bell pepper, and celery. Cook until vegetables soften, 3 minutes. Add garlic, cook 1 minute.

2Add 2 3/4 cups water, rice, and thyme; bring to a boil. Reduce heat, cover, and simmer until rice is done, 30 minutes. Remove from heat, stir in beans and sausage. Cover and let stand 5 minutes. Salt and pepper to taste. Serve hot.
