Pesto Pasta Primavera

Ingredients

1pkg (16oz.) Central Market Whole Wheat Penne Pasta,

2 tsp.H-E-B Extra Virgin Olive Oil,

1c.zuchinni, sliced thin,

1c.mushrooms, sliced,

1/2c.H-E-B Sundried Tomatoes, packed in oil, cut in half,

1/2c.H-E-B Kalamata Olives, sliced (optional),

1/4c.H-E-B Basil Pesto,

1/4c.H-E-B Parmesean Cheese, shredded,

2Tbsp.parsley, optional garnish,

Directions

1Cook pasta according to directions on package.

2Meanwhile, coat a skillet with oil and sauté zucchini and mushrooms over medium heat until tender. Add the tomatoes and olives.

3When pasta is al dente, drain and transfer to the skillet with the veggies. Add the pesto and toss until all ingredients are well mixed and heated through.

4Remove from heat. Plate and garnish with cheese and parsley. Serve with fresh salad, if desired.
