1Tbsp.H-E-B Extra Virgin Olive Oil,
1lb.boneless skinless chicken breast,
1 tsp.fajita seasoning,
1can (14.5 oz.) H-E-B Whole Kernel Corn, undrained,
1large zucchini, sliced and cubed,
1can (14.5 oz.) H-E-B Diced Tomatoes, undrained,
1cntr. (32 oz.) Central Market Low Sodium Chicken Broth,
1Heat oil in a large skillet and brown chicken on both sides.
2Add fajita seasoning, corn, zucchini, diced tomatoes and broth. Bring to a boil over High heat. Reduce heat to Medium-Low and cook 10 minutes or until zucchini is tender.
3Serve hot with warm corn tortillas and enjoy!
