Red Mashed Potatoes with Greek Yogurt

2lb.small red potatoes, cubed,


1/2c.skim milk,

1/4c.nonfat greek yogurt,

•salt and pepper,


1Bring a large pot of water to boil. Add a pinch of salt and potatoes. Cook 10 minutes or until tender, but still firm. Drain potatoes.

2Mix butter, skim milk, and yogurt; combine with potatoes.

3Mash together until smooth and creamy. Add salt and pepper to taste.
