1 1/4c.all-purpose flour,
1/2 tsp.baking soda,
1/4c.H-E-B Canola Oil,
3Tbsp.H-E-B Unsalted Butter,
1/2c.sugar or sugar substitute equivalent,
1 1/2 tsp.vanilla extract,
3/4c.H-E-B Old Fashioned Rolled Oats,
3/4c.semisweet chocolate chips,
1Preheat oven to 350°F. Line 2 baking sheets with parchment paper. Set aside.
2In a mixing bowl, combine flour, baking soda, and salt; set aside.
3In a large bowl, beat together oil, butter, and sugars with an electric mixer. Add egg, egg white, and vanilla, beating until well combined. Fold in oats, flour mixture, and chocolate chips. Cover and refrigerate dough 15 minutes.
4Place rounded teaspoonfuls of dough 2 inches apart on prepared baking sheets.
5Bake, 10 minutes or until cookies are set and golden brown. Cool 5 minutes on sheets; transfer to a wire rack to cool completely.
