6stripsH-E-B Hardwood Smoked Turkey Bacon,
1 1/4c.H-E-B Real Egg Whites,
2Tbsp.H-E-B Thick n' Chuky Mild Salsa,
1/3c.whole wheat bread crumbs,
3eachzucchini squash cut into "fries",
1Preheat oven to 400°F. Spray baking sheet with non-stick spray. Set aside.
2In a large non-stick skillet, cook turkey bacon on medium high heat until crisp. Remove to paper towel to cool. Chop bacon into small pieces and set aside.
3Use three pie pans or plates to set up a breading station. Place flour in first pan; eggs, salsa and garlic powder in second; and bread crumbs and bacon in third.
4Coat each zucchini fry with flour, dip in egg mixture and toss in bread crumbs. Place on prepared baking sheet.
5Spray top side of fries with cooking spray and bake 20 minutes or until crisp. Sprinkle with salt to taste.
