Jerk Pork Tenderloin

1Tbsp.H-E-B Pure Olive Oil,

1lb.pork tenderloin,

1Tbsp.Adams Reserve Jerk Rub,


1/2c.H-E-B More Fruit,

2Tbsp.Dijon-style mustard, juice,

1Tbsp.grated fresh ginger,


1Rub oil over tenderloin on all sides; sprinkle with seasoning rub and set aside.

2Preheat grill or heat a grill pan over medium-high heat. Sear tenderloin on all sides for about 10 minutes. Reduce heat to medium (for grill, move to cooler area); cover and cook pork to an internal temperature of 145°F (15 to 20 minutes).

3Let stand 5 minutes to allow juices to redistribute; then cut into thin slices. Pork slices should be pink in the centers.

4Meanwhile, whisk sauce ingredients together in a small saucepan; place over Medium-Low heat and cook 5 to 7 minutes, whisking constantly. Remove from heat and serve with pork slices.
