Blackened Cajun Burger

1lb.ground beef,

1/4c.dry bread crumbs,


1/ sauce,

3green onions, chopped,

1 1/2Tbsp.Tony Chachere's or Zatarain's Cajun seasoning, divided,

1/2Tbsp.Creole mustard,

1Tbsp.vegetable oil (for grill or skillet method),

4slices cheddar cheese,

4hamburger buns or individual ciabatta rolls,


1Preheat grill or skillet over high heat.

2In a medium bowl, mix ground beef, bread crumbs, egg, hot sauce, Worcestershire, green onions, 1/2 Tablespoon Tony Chachere's or Zatarain's Cajun Seasoning, and mustard. Form into 4 patties.

3Sprinkle both sides of each patty evenly with remaining 1 Tablespoon of Tony Chachere's or Zatarain's Cajun Seasoning.

4For the grill: Lightly oil grill grate, and cook patties over high heat 1 minute per side to achieve blackened look. Lower heat and finish cooking 4 minutes per side.

5For the skillet: Add oil to pan and swirl to coat bottom of pan. When oil just starts to smoke, add patties, 2 at a time, and cook 1 minute per side to achieve blackened look. Turn heat to medium and continue cooking 4 minutes per side until cooked through. (Hint: Use 2 pans to get all burgers done at same time.)

6Place 1 slice cheese on each burger, and allow to melt. Serve burgers on buns with your favorite toppings, sauces, and a side of fried okra!
