1largesweet potato, peeled and cut into 1/2-inch cubes,
1/2c. each:H-E-B Fat Free Sour Cream and Reduced Fat Feta Cheese Crumbles,
4H-E-B Garlic Cloves, chopped,
2Tbsp.H-E-B Premier Olive Oil,
1/2c.thin sliced fresh basil,
1/2c.H-E-B Sundried Tomato Strips,
1c.thin sliced jarred H-E-B Roasted Red and Yellow Peppers,
1/2box (13 oz.)H-E-B 100% Whole Wheat Pasta,
•salt and fresh cracked black pepper,
1Place sweet potatoes in microwave-safe bowl, cover, cook in microwave on high power 4 minutes or until tender.
2Meanwhile, combine sour cream, feta cheese, garlic, olive oil, basil, sundried tomato and peppers in large pasta bowl.
3Cook pasta according to package directions, drain. Add pasta and sweet potatoes to pasta bowl. Toss and season to taste with salt and pepper. Serve warm or cold.
