Speedy Bacon & Asparagus Bake

4H-E-B Whole Wheat or 7 Grain Tortillas,

4H-E-B Large Eggs,

1c.H-E-B Fat Free Half & Half,

1c.H-E-B Reduced Fat Shredded Monterey Jack Cheese,

1/2tsp.crushed red pepper (optional),

8slicesH-E-B Fully Cooked Bacon,

1bag (16 oz.)H-E-B Cut Asparagus, thawed,


1Spray each tortilla with nonstick canola spray and place it in a microwave-safe bowl.

2Combine eggs, half-and-half, 1/2 cup cheese, and red pepper in a mixing bowl. Beat with an electric mixer 30 seconds. Pour 3/4 cup egg mixture in each tortilla and set aside.

3Heat bacon according to package directions. Crumble 2 slices bacon in each tortilla. Top with 1/3 cup asparagus and 2 tablespoons remaining cheese. Cover loosely with plastic wrap. Microwave each on high power 2 minutes or until egg is cooked to desired degree of doneness.
