4largesweet yellow onions, peeled and cut 1/4 slice off top, not root,
1blooming onion cutter,
1/2c.H-E-B Specialty Shred Habanero or Chipotle Cheese,
1/2c.Hill Country Fare Whole Wheat Bread Crumbs,
1/2c.H-E-B Olive Oil,
2Tbsp.H-E-B Texas Originals Beef or Chicken Fajita Seasoning,
1Cut onions according to manufacturer's instructions for blooming onion cutter. Drain on paper towels cut-side down. Combine cheese and bread crumbs in a small bowl. Set aside.
2Prepare gas or charcoal grill to medium heat (350°F). Line baking sheet with foil and place a grilling mesh on top.
3Brush each onion on cut side with olive oil and sprinkle with fajita seasoning. Place seasoned onion on prepared grilling mesh, cut-side down. Remove from tray and place grilling mesh directly on hot grill and grill onions for 5 minutes. Carefully turn onions over and spoon 2 Tablespoons of shredded cheese mixture on each onion blossom. Close lid and grill 3 to 4 minutes or until cheese melts.
4Place grilled onions on serving platter and cut each onion in half and serve warm.
