Gluten Free Spaghetti with Sun-Dried Tomato Pesto

Ingredients

2c. (4 oz.)H-E-B Sun-Dried Tomatoes,

1/4c.H-E-B Olive Oil,

8H-E-B Ready, Fresh, Go! Garlic Cloves, quartered,

8c.Hill Country Fare Slivered Almonds,

1/4c.basil leaves,

1pkg. (16 oz.)Gluten Free Spaghetti,

•favorite grated cheese,

Directions

1Place sun-dried tomatoes and 2 cups hot water in a large microwave-safe bowl. Heat tomatoes and water in microwave on high power for 4 minutes.

2Combine tomatoes with water, olive oil, garlic, almonds and basil leaves in food processor bowl. Process for 1 minute or until tomato pesto is chunky smooth. Heat a large skillet over medium heat for 3 minutes. Add tomato pesto and 1/2 cup water to skillet. Heat tomato pesto for 5-10 minutes, stirring occasionally.

3Cook spaghetti according to package directions and drain. Combine hot pasta and sun-dried tomato pesto in a large bowl; toss to coat. Top pasta with your favorite grated cheese.
