5 1/2lb.flank steak, trimmed,
2c.Central Market Oraganics Tomato Purée,
3Tbsp.Central Market Oragnics Paprika,
1 1/2Tbsp.Central Market Organics Cayenne Pepper,
1 1/2Tbsp.Central Market Organics Oregano,
2tsp.Central Market Organics Cumin & Ground Black Pepper,
3/4c.Central Market Organics Light Brown Sugar,
1Tbsp.Central Market Organics Minced Garlic,
1Combine rub ingredients in zipper bag, seal and toss to blend. Remove 1/2 cup of rub and save for the sauce. Apply the remaining rub to all sides of the flank steak. Wrap seasoned flank steak tightly with plastic wrap and refrigerate for 2 hours or overnight.
2Charcoal or Gas Grill: Prepare grill so that fire is hot (375°F - 400°F, high setting for gas grills).
3Grill flank steak directly on the hot fire 5 to 7 minutes per side for medium-rare. Grill to the degree of doneness desired.
4Sauce: add tomato purée to the remaining rub and stir well. Remove the steak from grill and let set 5 minutes before cutting. Slice steak very thin across the grain and place on serving platter. Serve with rub sauce if desired.
