1c.H-E-B Chipotle & Garlic Fire Roasted Salsa,
*Hill Country Fare Canola Oil Non-Stick Spray,
16H-E-B White Corn Tortillas,
1/2c.fine chopped Texas 1015 Onion,
1pkg. (8 oz.)H-E-B Grated Queso Cotija,
1Heat oven to 400°F. Line a large baking pan with foil, spray with nonstick cooking spray, and set aside. Blend salsa in blender or food processor to a smooth consistency, place in a pie pan and set aside.
2Spray tortillas on each side with one squirt of the nonstick cooking spray, stack, and wrap in plastic film. Heat tortillas in microwave for 1 minute and 15 seconds, then remove plastic film.
3Dip each tortilla in the chipotle salsa, spread 2 tablespoons of queso and 1 to 2 teaspoons chopped onion down center of tortilla and roll tightly. Place enchiladas in prepared baking pan in a single layer, seam side down. Top with remaining cheese, onions (if desired) and chipotle salsa. Bake for 15 minutes and serve hot.
