2 1/2c.H-E-B Baker's Scoop Whole Wheat Flour,
1c.H-E-B Baker's Scoop All Purpose Flour,
2tsp.Hill Country Fare Baking Powder,
3/4c.H-E-B Extra Light Olive Oil,
1 3/4c.brown sugar blend with Splenda,
1c.H-E-B Real Egg,
1c.fresh cranberries, chopped,
2Tbsp.fresh grated orange peel,
1/2c.Hill Country Fare Walnut Pieces,
1Heat oven to 350°F. Line 3 cookie baking sheets with H-E-B Parchment Paper and set aside.
2Combine the whole wheat flour, all purpose flour and baking powder in a large mixing bowl and set aside.
3Beat the olive oil and brown sugar blend using an electric mixer on medium speed for 1 minute. Add in the Real Egg 1/4-cup at a time, on medium speed (about 1 minute). Add the flour mixture one cup at a time on low speed (about 2 minutes). Stir in the chopped walnuts, cranberries and orange zest and mix for 30 seconds on medium speed.
4Drop dough by rounded Tablespoonful onto prepared cookie sheet pans. Bake the cookies for 15 minutes or until golden brown.
