1bag (12 oz.)H-E-B Wild Alaskan Cod Fillets,
1/2tsp.Hill Country Fare Fajita Seasoning Blend,
1/2c. choppedred onion,
1largetomato, chopped (2 c.),
1jalapeño pepper, thin sliced,
*juice of 1 lime,
1Tbsp.H-E-B Extra Virgin Olive Oil,
2c.H-E-B Ready Fresh Go! Spring Mix,
1Remove the cod fillets from the package, cut into 1/2 inch pieces and place in a microwave safe dish. Season the cod to taste with 1/2 teaspoon of the fajita seasoning. Reserve the remaining fajita seasoning for the Ceviche. Cover the dish with plastic wrap and microwave on High power for 3 minutes or until flaky; drain & cool 15 minutes.
2Combine the drained cod fish, chopped onion, chopped celery, chopped tomato, sliced jalapeño pepper, juice of 1 lime, cilantro, remaining fajita seasoning and olive oil in a large bowl and toss to combine. For each salad, serve 1 1/2 cups Ceviche over 1 cup Spring Mix greens.
