Healthy Cooking from H-E-B
2Tbsp.H-E-B Olive Oil,
1mediumcarrot, peeled & shredded,
3/4c.fine chopped onion,
4button mushrooms, fine chopped,
1lb.H-E-B Ground Turkey Breast,
1/4c.whole wheat bread crumbs,
1H-E-B Large Egg, beaten,
1Tbsp.Hill Country Fare Worcestershire Sauce,
2c.Central Market Spring Mix,
1Heat the oven to 400°F. Line a baking pan with foil and spray with no stick spray and set aside.
2Heat a large heavy bottom skillet over medium heat for 3 minutes. Add the olive oil, carrots, zucchini, onion and mushrooms to the hot skillet and stir-fry for 5 minutes. Place vegetables in a mixing bowl and allow to cool 5 minutes.
3Add the ground turkey, whole wheat bread crumbs, beaten egg and Worcestershire sauce to the cooked veggies. Mix with your hands and form into 12 meatballs. Place on the prepared sheet pan and bake on the center oven rack for 15 minutes or until a the internal temperature reads 165°F. Place 1/2 cup spring mix on 4 plates and arrange 3 meatballs on each and serve.
