1tsp.Central Market Organics Dill or Herbs De Provence,
•juice of 1 lemon,
•salt and pepper, to taste,
1pkg.H-E-B Ready Fresh Go! Asparagus,
4c.H-E-B Rotisserie Original Chicken, shredded,
2c.H-E-B Ready Fresh Go! Baby Spinach Leaves,
2large ripetomatoes, thin sliced,
1Combine the mayonnaise, buttermilk, dill or herbs de Provence and lemon juice in a small bowl. Season the dressing with salt and fresh cracked pepper and set aside.
2Place the package of asparagus spears in the microwave oven and microwave on High power for 2 minutes. This is just enough to make asparagus crisp tender. Cut off and discard the bottom inch of the asparagus and cut into 1-inch sections.
3Combine the shredded chicken, asparagus and radishes in a salad bowl. Add the salad dressing , toss, cover and refrigerate.
4Layer the baby spinach leaves, tomato slices on 4 individual dinner plates and spoon 1/4 of the chicken salad on each plate.
