2lb.boneless leg of lamb, cut into 1 1/2 inch cubes,
2Tbsp.H-E-B Light Olive Oil,
6H-E-B Ready Fresh Go! Garlic Cloves, chopped,
1/2c.H-E-B Ready Fresh Go! Chopped Onion,
1Tbsp. each chopped:fresh oregano, thyme & mint,
*juice of 1 lemon,
1each:green & red bell pepper, cut into 8 squares,
1Combine the lamb cubes, olive oil, chopped garlic, chopped onion, oregano, thyme, mint and lemon juice in a zipper bag. Season the lamb to taste with salt and pepper and seal the bag and marinate in refrigerator for 1 hour or until ready to grill.
2Assemble Kabobs in the following order: red pepper, lamb cube, onion wedge, lamb cube, mushroom, lamb cube, tomato, lamb cube and green pepper.
3Heat gas or charcoal grill to hot (400°F). Spray a grilling mesh with no-stick spray and set over a foil lined baking sheet. Arrange the lamb kabobs on the grilling mesh and place on the hot grill. Grill the kabobs 10 minutes, turning once during the grilling time.
