Fajita Seasoned Meat Loaf

1Tbsp.Hill Country Fare Canola Oil,

2c.H-E-B Frozen Fajita Vegetable Blend, thawed on paper towels,

2lb.H-E-B Extra Lean Ground Beef,

1tsp.H-E-B Beef Fajita Seasoning,

1/4c.Central Market Ground Flax Seed,

1/4c.H-E-B Real Egg,

1c.H-E-B Fresher Lasting Salsa,


1Heat the oven to 350°F. Spray a 2 quart loaf pan with no stick spray and set aside.

2Heat a heavy bottom skillet over high heat for 2 minutes. Add the oil and fajita vegetables and stir-fry for 4 minutes or until onions are golden.

3Combine the fried fajita vegetables, ground beef, fajita seasoning, flax seed and Real Egg in a large bowl (don't over mix). Press the meat mixture into the prepared baking pan and bake on the center oven rack for 35 minutes or until an instant read thermometer reads 170°F. Cool the meat loaf for 10 minutes before removing from the baking dish. Cut into 1-inch slices and serve with Fresher lasting salsa.
