Monterey Jack Spinach Mushroom Scramble

2tsp.Hill Country Fare Canola Oil,

2tsp.chopped red onion,

1c.thin sliced mushrooms,

1c.H-E-B Ready Fresh Go! Baby Spinach, thin sliced,

1/8tsp.crushed red pepper (optional),

1/2c.H-E-B Real Egg,

1/4H-E-B Reduced Fat Shredded Monterey Jack Cheese,


1Heat a heavy bottom skillet over medium heat for 2 minutes. Add the canola oil, red onion, and mushrooms and stir fry for 3 minutes or until mushrooms are tender.

2Add the thins sliced spinach leaves and crushed red pepper, if desired, and stir fry for 2 minutes. Add the H-E-B Real Egg and cook until egg is at desired doneness. Season with salt and pepper to taste and top with shredded Monterey Jack cheese.
