Healthy Cooking from H-E-B
1(8-9 inch)glass pie pan or baking dish,
*Hill Country Fare Aeresol Butter No Stick Spray,
2c. choppedfresh asparagus spears, discard bottom inch,
4stripsH-E-B Fully Cooked Bacon, heated and chopped,
1Tbsp. choppedred onion,
1Tbsp.sliced fresh basil or 1/2 tsp. dried crushed basil,
1c.H-E-B Fat Free Half & Half,
2c.H-E-B Real Egg,
1/2c.H-E-B 2% Reduced Fat Monterey Jack Cheese,
1Heat the oven to 350°F. Spray an 8 – 9 inch baking dish with no-stick butter spray and set aside.
2Place the chopped asparagus in a microwave safe bowl, cover with plastic wrap, microwave on High power for 3 minutes and set aside.
3Sprinkle the chopped bacon, asparagus, chopped onion and basil in the prepared baking dish. Season with salt and fresh cracked pepper to taste.
4Combine the half and half, H-E-B Real Egg and shredded cheese in a mixing bowl and pour into the baking dish. Place the quiche baking dish in a larger baking pan and fill the outside pan with 1/2 inch water. Carefully place the quiche on the center oven rack for and bake for 25 minutes or until a knife inserted in the center comes out clean. Cut the quiche into 4 servings.
