Ingredients

1c. each:H-E-B Select Grilled Zucchini, Eggplant & Peppers, thawed and thin sliced,

1/4c.H-E-B Chef Prepared Basil Pesto Sauce,

8H-E-B Harvest Moon Kalamata Olives, pitted and thin sliced,

1/4c.H-E-B Reduced Fat Crumbled Feta Cheese,

32H-E-B Deli Fully Fit Flatbread Crackers,

Directions

1Combine the thin sliced grilled vegetables, sun dried tomato or pesto sauce, sliced olives and feta cheese in a microwave safe mixing bowl and toss to combine. Season the mixture to taste with salt and fresh cracked black pepper. Cover the bowl and refrigerate or microwave on High power for 2 minutes and stir.

2Serve 1 Tablespoon of the warm grilled Mediterranean Vegetable mixture on each H-E-B Deli Fully Fit Flatbread cracker and arrange on a serving platter. You can also allow guests to top their own crackers.
