3/4c.H-E-B Real Egg Product,
1Tbsp.red bell pepper, chopped,
1Tbsp.chopped cilantro, basil or parsley,
•salt and pepper, to taste,
1Cut the tomato in half lengthwise. Scoop out the tomato pulp from each half, chop, place in a bowl and set aside.
2Spray a small microwave safe bowl or dish with no stick spray. Pour the H-E-B Real Egg in the bowl, cover with plastic wrap and microwave on High power for 30 seconds or to desired degree of doneness. Chop the cooked egg and add to the chopped tomato pulp.
3Add the celery, red pepper, radish, mayonnaise and cilantro or selected herb to the bowl; toss to coat ingredients. Season to taste with salt & pepper. Stuff the 2 tomato halves with the egg salad and serve.
