*H-E-B Parchment Paper,
1/4c.H-E-B Italian Shredded Parmesan Cheese,
1/4tsp.ground cayenne pepper,
2Tbsp.cilantro, fine chopped,
2Tbsp.red onion, fine chopped,
1Heat oven to 500°F. Lightly spray a baking sheet with no stick spray and lay a sheet of parchment paper on top.
2Combine the shredded parmesan cheese and cayenne pepper in a small bowl. Spoon cheese mixture by Tablespoon on the prepared baking sheet making 8 small mounds. Press each mound with the back of a fork or spoon until small spaces appear (like a doily).
3Place the baking pan on the center oven rack and bake for 3 to 4 minutes, until the cheese is melted and golden. Remove the pan from the oven and cool for 5 minutes. Carefully transfer the cheese crisps on a wire rack to crisp for 10 minutes.
4Combine the chopped tomato, cilantro and onion in a small bowl. Before serving, top each with a Tablespoon of mixture.
