Ingredients

1tsp.Hill Country Fare Canola Oil,

2Tbsp.onion, chopped,

1/4c. each:bell pepper & tomato, chopped,

1Tbsp. each:fresh jalapeño & cilantro, chopped,

1/2c.H-E-B Real Egg,

1H-E-B Corn Tortilla, cut into thin strips,

1/4tsp.Hill Country Fare Fajita Spice,

2Tbsp.H-E-B Fresher Lasting Salsa (optional),

Directions

1Heat a heavy bottom skillet over high heat for 2 minutes. Add the canola oil and onions and stir-fry for 2 minutes. Add the bell pepper and tomato and stir-fry for 1 minute. Add the tomato, jalapeño and cilantro and stir-fry for 1 minute.

2Reduce heat to medium low and add the H-E-B Real Egg stirring often until egg begins to cook to desired doneness. Add the tortilla strips and stir until strips are heated through. Season with fajita spice and top with fresh salsa picante if desired and enjoy!
