1/2c.Panko Bread Crumbs,
1Place oil into a large flat sauté pan. Preheat on medium heat during preparation. Then preheat oven to 350°F.
2In a large mixing bowl beat eggs. Add chicken, chorizo and seasoning; then stir. Add in bread crumbs and combine.
3Form meat mixture into meatballs. Use your hands or use a portioning scoop.
4Turn stove temperature to medium-high. Place meat balls slowly into the oil. Cook for 2 to 3 minutes until lightly browned.
5Remove meatballs and place on to a foil-lined baking sheet. Bake in oven for 10 minutes.
6Meatballs are ready when the internal temperature reads 165°F. Serve warm on bamboo skews.
