2lb.boneless pork loin, cut into 24 ½-inch pieces,
½fresh pineapple, skin removed and cut into 16 1½-inch pieces,
2limes, each cut into 4 wedges,
1red onion, peeled and cut into 8 wedges,
2green bell peppers, cut into 24 1½-inch pieces,
2containers (4 oz. each)H-E-B Mojo de Ajo Splash,
1Combine pork loin cubes, pineapple, lime wedges, onion wedges, bell pepper, and H-E-B Mojo de Ajo Splash in a large zipper bag. Marinate for 30 minutes in refrigerator or until ready to grill.
2Use 8 metal or water-soaked bamboo skewers for kabobs. Thread each skewer with ingredients as desired. Cover kabobs with plastic wrap and refrigerate until ready to grill.
3Prepare charcoal or gas grill for cooking (375°F). Grill kabobs 4 to 6 minutes per side until internal temperature of pork reaches 160°F.
