Ingredients

1c.H-E-B Restaurant Style Seasoned Croutons,

2Tbsp.Hill Country Fare Canola Oil,

1 1/2 c. H-E-B Frozen Fajita Blend Vegetables, chopped,

2lbs.H-E-B Lean Ground Beef,

2tsp.H-E-B Texas Spice Co. Beef Fajita Seasoning,

1/4c.chopped fresh cilantro,

2H-E-B Large Eggs,

1/2 c.H-E-B Ketchup,

Directions

1Heat oven to 400°F. Spray a 1 1/2-quart loaf pan with nonstick cooking spray and set aside.

2Place croutons in food processor, process to coarse crumbs, and set aside. Heat a large skillet on high heat for 2 minutes. Add canola oil and chopped vegetables and stir-fry until crisp brown on edges (about 3 minutes). Remove from heat.

3 Quickly combine crushed croutons, fried vegetable mixture, ground beef, fajita seasoning, cilantro, and eggs in a bowl. Press the mixture into prepared loaf pan. Bake for 45 minutes or until a quick-response thermometer reads 160°F. Pour off excess fat and cool for 10 minutes. Top meat loaf with ketchup and enjoy a great meal.
