1bag(12 oz.) H-E-B Wild Alaskan Cod Fillets,
1tsp.Hill Country Fare Fajita Seasoning Blend,
1c.chopped red onion,
2medium tomatoes, chopped (2 cups),
1jalapeño pepper, thin sliced,
*Juice of 2 limes,
4tablespoons chopped cilantro,
1Tbsp.tablespoon H-E-B Extra Virgin Olive Oil,
1Cut cod fillets into 1/2-inch pieces and place in a microwave-safe dish. Season to taste with 1/2 teaspoon fajita seasoning. Reserve remaining fajita seasoning. Cover the dish with plastic wrap and microwave on high power for 3 minutes or until cod is flaky. Drain, then cool for 15 minutes.
2Combine drained cod, onion, celery, tomatoes, jalapeños, lime juice, cilantro, remaining fajita seasoning, and olive oil in a large bowl and toss. Serve ceviche with chips or over salad greens.
