Ingredients

1 Hill Country Fare Whole Chicken,

1 Tbsp. Hill Country Fare Canola Oil,

1 tsp. Hill Country Fare Fajita Spice,

1 jar (8 1/4 oz.) H-E-B Mole Poblano,

2 c. Central Market Free Range Chicken Broth-Low Sodium,

Directions

1 Cut chicken into 8 pieces and remove skin if desired. Heat a large heavy-bottom skillet over medium heat for 3 minutes. Add canola oil and brown 3 to 4 pieces of chicken at a time, 2 minutes on each side. Place browned chicken in Crock-Pot.

2 In the same skillet, dissolve mole in chicken broth and cook over medium heat until thickened, about 5 minutes. Add mole to browned chicken, cover, set Crock-Pot to high heat, and cook for 3 hours. Or cook on low heat for 6 hours. Season to taste with salt and pepper and serve.
