Place chocolate chips in a food processor bowl and set aside.

Heat whipping cream in a large microwave-safe bowl (it will bubble vigorously) in microwave on high power for 2 minutes.

Add boiling cream to chocolate chips and allow to sit for 1 minute. Pulse the mixture 3 to 4 times or until the chocolate ganache is smooth and creamy.

Place ? cup of the chocolate ganache into each of 8 small bowls and add 1 teaspoon of oneof your chosen flavor extracts to each. Be sure to label the bowls with the flavor.

Use a gold or silver permanent marker to label the handles of 6 teaspoons with the flavor name. Line 2 large sheet pans with foil and arrange the spoons on the pans.

Use a clean spoon to fill 6 spoons of each fl avor with the chocolate ganache. Rest the handles of the spoons on the edge of the sheet pan so that the chocolate does not spill over. Place the pans in the refrigerator to chill for 30 minutes or until the chocolate hardens.

Once the spoons are firm, wrap each one in plastic wrap and tie with a festive ribbon or a twisty tie.
