Ingredients

2Tbsp.H-E-B Extra Virgin Olive Oil,

¾c.H-E-B Imported Brown & Wild Rice,

½c.H-E-B Ready, Fresh, Go!® Diced Onion,

2H-E-B Ready, Fresh, Go!® Garlic Cloves, chopped,

1container(32 oz.) Central Market® Vegetable Broth, regular or reduced sodium,

1pkg.(10 oz.) Central Market® All Natural Porcini & White Mushrooms with Spinach,

2c.chopped turkey,

*Salt and pepper,

2c.H-E-B Restaurant Style Seasoned Croutons,

1c.H-E-B Shredded Swiss Cheese,

Directions

1 Heat a large soup pot over medium heat. Add oil, rice, and onions and stir-fry for 3 minutes until onions are golden. Add garlic and stir-fry for 1 minute. Add vegetable broth and 2 cups water. Bring soup to a boil, reduce heat to medium low, and cook for 20 minutes covered.

2Add mushrooms and spinach and turkey. Increase heat to medium and cook for 5 minutes uncovered. Season to taste with salt and pepper.

3Top each serving with ¼ cup croutons.
