1lb.ground boneless leg of lamb,
1c.H-E-B Ready, Fresh, Go!® Diced Sweet Onion,
½c.fresh chopped cilantro,
1fresh jalapeño pepper, seeded and chopped,
4bakery whole wheat bolillos,
1c.H-E-B Grated Cotija Cheese,
2H-E-B Fresher Lasting Jumbo Avocado Halves, thin sliced,
1Combine lamb, onion, cilantro, and jalapeño. Do not overmix or it will be tough. Shape into 4 patties 1 inch thick.
2Heat gas or charcoal grill to medium 375°F to 400°F. Grill for 6 minutes, turning once and cooking to desired degree of doneness (145ºF to 155ºF internal temperature).
3Place patty on half of bolillo, top with cheese, 3 to 4 slices of avocado, and the top of the bun.
