Asian Gingered Salmon

Ingredients

2 cedar planks (soaked in water 1 hours prior to using),

4 (8 oz.) salmon filets,

2 Tbsp. brown sugar,

2 Tbsp. soy sauce,

1 Tbsp. fresh grated ginger,

1 Tbsp. minced garlic ,

2 tsp. ancho chili powder,

• juice of 1 lemon,

• zest of 1 lemon,

Directions

1 To make marinade, lightly whisk together brown sugar, soy sauce, ginger, garlic, ancho chili and lemon ingredients in a mixing bowl.

2 Place fillets in a sealable bag and add marinade. Turn bag and coat salmon with marinade mixture. Let fillets sit for 2 to 6 hours, turning bag occasionally. Refrigerate until ready to use.

3 Preheat grill to medium heat (350-400°F).

4 Place cedar planks on the grill; then place marinated salmon fillets on the planks.

5 Cover and cook for roughly 12 minutes or until salmon reaches an internal temperature of 150°F.
